21.12.09 - Sheperd's Pie
Tomorrow me and friends are going to cycle to Broga. I'm planning to make them a special treat. Yep, pies seemed to be awesome for energy booster. Easy to make and carry. Me and sister made this and we had a great time munchin' away this pies! I'm going to share this recipe which we had found in a magazine. Enjoy!~
The ingredients are:
Topping
-2 large potatoes, peeled and chopped roughly
-1 tbsp butter
-1/4 cup milk
Filling
-2 cups finely chopped cooked roast lamb (or use 400g finely diced lamb, or mince lamb, plus olive oil
-1 onion, peeled and diced
-1 tbsp fresh parsley, chopped
-4 tbsp tomato sauce (ketchup)
-1/4 cup beef or vegetable stock
-salt and cracked black pepper (i used extra of pepper coz i like it to be pepperish)
-green beans, to serve (i skipped this - for the cycling trip )
STEP 1
Preheat oven 180 deg, (160 deg fan forced)
STEP 2
Make topping - boil potatoes in saucepan of water until tender (about 10 mins) Drain and mash with butter and milk.
STEP 3
Make filling - mix roast lamb with onion, parsley, tomato sauce, stock, salt and pepper (alternate method : fry diced lamb or lamb mince in a little oild for about 10 mins until nicely browned, then add other ingredients)
STEP 4
Assemble - spoon mixture into ramekins and top with mashed potato. Place in oven and cook for 20 mins until top is browned. Serve immediately. Yummmy with green beans.
